spinach pesto pasta

Spinach pesto. This is pesto elevated with spinach. It’s so easy to make. You can bottle this and use it on anything; from salads, sandwiches and in this case, pasta. 

When I have to make dinner quickly but with a punch of flavour, I make this recipe. 

If you have kids, you can easily make this in half an hour or less. While you’re boiling your pasta, you grab all your ingredients and use the food processor.

Ingredients:

  • 4 cups of spinach
  • 2-3 tbsp of olive oil
  • 1/2 cup of fresh basil
  • 1/2 cup of fresh parsley
  • 1 tbsp of minced garlic or 3/4 fresh cloves (I like it strong)
  • a handful of pine nuts
  • 2 tsp of lemon juice
  • 1/2 cup of grated parmesan
  • Salt + pepper to taste
  • Box of pasta (I like to use spaghettini)
  1. Boil pasta – adding salt to the water helps flavour the pasta
  2. Put all items (with the exception of the parmesan cheese) in the food processor.
  3. Process until combined – continually scraping down the sides. You should yield approx. 2/3 of a cup.
  4. Add additional oil if needed.
  5. Once the pasta has boiled, remove from the pot and reduce the heat. Add a few tbsp of olive oil and lightly cook the spinach pesto (few minutes until you smell the aroma).
  6. Add the pasta back in. Stir and add the parmesan cheese. 
  7. Salt + pepper to taste

There you have it! Simply delicious.
